Breastfeeding Bites

This receipe is easy to make ahead and can be stored in the fridge or freezer, making them a perfect one-handed snack for busy parents while feeding your baby, on-the-go, or anytime you need a quick boost

Notes: dairy free, source of omega 3, energy and nurtient rich, fibre packed, prep ahead of time

Ingredients

  • 300 g dates (if using packaged dates, soak overnight to plump them up, then drain)

  • 1/4 cup nut butter of your choice

  • 1/3 cup cacao powder

  • 1/4 cup walnuts, finely chopped

  • 1/4 cup chia seeds

  • 1/3 cup desiccated coconut, plus extra for rolling

  1. Soak the dates in water overnight to make them soft .

  2. Add the dates to a food processor and blend until smooth..

  3. Add the nut butter and blend again until well combined.

  4. Transfer the mixture to a large bowl and stir through the cacao powder 

  5. Add the chopped walnuts, chia seeds, and desiccated coconut, mixing until combined.

  6. Place some extra coconut in a small bowl for rolling. (Tip: Get creative! You can swap coconut out and roll in cocoa, crushed nuts or sprinkles for a fun look)

  7. With damp hands scoop small amounts of the mixture and roll into balls. 

  8. Roll each ball in the coconut and place in a container. Continue until all the mixture is used.
